Spring 2014 is proving to be an exciting time at Four Seasons Resort Sharm El Sheikh with the recent appointment of Chef Marco Acquaroli in the role of Italian Sous Chef in our Resort’s Italian Kitchen.
Hailing from Milan, the Italian city renowned for its outstanding industrial design, fashion and architecture, Chef Marco worked at a number of acclaimed restaurants across Italy, including the Miramonti l’Altro restaurant (2 Michelin stars) as Commis Chef. After a stint at Volto restaurant (2 Michelin stars) as Chef de Partie, he went on to join the Four Seasons family at Four Seasons Geneva in Il Lago restaurant in 2011 as Chef de Partie, later advancing to Junior Sous Chef. Marco’s current mission at Four Seasons Resort Sharm El Sheikh is to take guests on a unique and exciting Italian culinary adventure every time you visit.
Using his vast culinary experience, as well as the freshest and most flavoursome produce available, he strives to create memorable dishes that will leave you craving delicious Italian food for days. The live cooking stations at Il Frantoio are a favourite element of his job. “It’s very challenging,” he admits, “as we do everything in front of our guests. However, I do enjoy it the most as it gives guests the chance to interact with us while we’re cooking!”.
